These corn syrup free scotcheroo bars are made as the classic peanut butter rice krispie treat. Topped with chocolate, and made without corn syrup, these bars are a real treat.
I love scotcheroo bars but I really, really, REALLY, do not like using corn syrup. It isn’t the best for your body and can be easily replaced with lots of other ingredients such as honey and agave. Whenever I have the chance not to use corn syrup, I chose not to use it.
You would never be able to tell that these bars are sweetened with coconut sugar and honey. It doesn’t give the bars a weird aftertaste or a different flavor, they simply taste the same. (but they are a lot better for you.) The only hint about the change in ingredients is the slightly darker color. My brothers did not notice until I told them. The best part is these only take less than ten minutes of hands on work!
One of my favorite things about scotcheroo bars is that they are gluten free so they are a great option for an easy gluten free dessert, also they can easily become dairy free if you substitute a dark chocolate, (many chocolates are actually dairy free if they are on the dark side.) and peanut butter for the butterscotch chips.
I personally love these bars because they are a quick and easy year round treat. These bars are even better because they are corn syrup free!
Life Lately and Recipe Testing
It is starting to really be fall this week in Minnesota. (slightly salty about that.) Right now I am totally ready for summer to come back but I am pretty sure that it’s gone until next May. I am just starting to get back into the rhythm of the school year and just got my first official job. I am also only a few weeks from taking my drivers test. Adulting right there. Scotcheroo Bars (No Corn Syrup!)
- 1 cup Coconut Sugar
- 1 cup Honey
- 2 cups Peanut Butter
- 6½ cups Rice Krispies
- 1 cup Chocolate Chips
- 1/2 cup Butterscotch Chips
- Pour the rice krispie cereal into a large bowl. Set aside.
- Combine the coconut sugar, honey, and the peanut butter in a saucepan over medium heat. When it is warm and slightly thinner pour it over the rice krispie cereal. Mix until the peanut butter mixture into the cereal until it is completely mixed.
- Pat the mixture into a greased 9×13 pan.
- In a small bowl melt the chocolate chips and butterscotch together and spread the chocolate mixture over the top of the bars.
- Allow the chocolate to set on the top of the bars before cutting. Enjoy with you favorite people.
