Breakfast is one of my favorite meals. There are no rules when it comes to breakfast. When you eat breakfast it can be sweet or savory, easy or complex, fancy or simple. For goodness sake you can eat what ever the heck you would like to for breakfast. Cold pizza, I’m here for it. Peanut butter and apples, no judgement, I totally eat that for breakfast on a regular basis.
This weekend I went on a retreat with my youth group. I was really craving granola so I made some to bring with before I left. I started with The Sweet and Simple Kitchen’s Maple Pecan Granola Recipe and by the time I placed it in the oven I had a chocolate coconut granola. (My life in a nutshell.) I literally adapt recipes so much. Last night I was going to make a salted caramel apple cupcake, what was my final product you might ask? A brown butter pumpkin cupcake with a cream cheese frosting. I really love this granola because, it is super easy to make. All you need to do is stir a few ingredients together, press them onto a cookie sheet and bake! I love when recipes are easy and effortless. Even though I would love to spend 3-5 hours in the kitchen everyday baking and cooking, it’s just not happening between school and work. This granola recipe is a quick and easy way to start off your day. You can have it in a parfait (using coconut yogurt if you are dairy free), you can top it with milk, you can even eat it plain! Healthy Chocolate Coconut Granola
- 3 cups Rolled Oats
- ½ cup Almond Meal
- ¼ cup Unsweetened Cocoa Powder
- 1 cup Unsweetened Coconut Flakes
- ⅓ cup Honey
- 3 tbsp Brown Sugar (or coconut sugar)
- 1 tsp Pure Vanilla Extract
- ⅓ cup Melted Coconut Oil
- Preheat the oven to 275° Fahrenheit.
- In a medium sized bowl combine all of the ingredients. When they are completely mixed together press the granola firmly onto a sheet pan.
- Bake for 35-45 minutes or until the granola is starting to firm up and the coconut flakes are golden brown.
- Allow the granola to cool for 10 minutes before breaking into chunks. Enjoy!
