Gelato VS Ice Cream
There are a few things that are different between gelato and ice cream. While both are pretty easy to make, they have different ingredients and different fat contents.
One of the things that differentiates ice cream and gelato is that gelato always has egg yolks. Classic American ice cream (Philadelphia style) does not contain eggs. American ice cream also has a higher fat content because it gets its creaminess from cream, while gelato gets its creaminess from the egg yolks.
Ice Cream Machine Recommendations
When you are making gelato or ice cream I highly recommend using an ice cream machine with a built in freezing unit. It is more expensive but it makes a very noticeable difference in the texture of gelato and ice cream. I have this ice cream machine. Again, it is pricy but very worth it if you are going to make frozen desserts on a regular basis.
When you use an ice cream machine with the insert that has to be placed in the freezer first, you can not churn your ice cream to a super thick consistency. With my ice cream machine I can churn it for as long as I want and can let it get to a consistency that is thick enough to scoop right out of the machine.
