Vegan Peanut Butter Bars

These 4 ingredient vegan peanut butter bars are full of creamy peanut butter flavor, hinted with flecks of vanilla, and full of gooey chocolate. The best part is that they only take 30 minutes to make!

Ingredients
  

  • ¼ cup Boiling Water
  • 3 tbsp Ground Flax Seed
  • 1 cup Peanut Butter
  • 1 cup Sugar (I used cane sugar but any kind will work.)
  • 1 tsp Pure Vanilla Extract (optional)
  • 3 tbsp Almond Milk
  • 1 cup Vegan Chocolate Chips (optional)

Instructions
 

  • Preheat the oven to 325° Fahrenheit. Line a 9x9 inch pan with parchment paper.
  • Combine the ground flax and the boiling water in a small bowl. Allow the mixture to sit for 3-5 minutes.
  • In another bowl combine the peanut butter, sugar, and vanilla if desired. Add the flax mixture. Stir until a smooth dough forms. Add the almond milk and the chocolate chips and mix until just combined.
  • Pat the dough into the prepared pan. Bake for 18-22 minutes or until the bars have golden brown edges.
